FOODlog #1342: Compressed Watermelon & Tiger Prawn
Here are 3 other dishes I did for a Valentine's Menu special this year. 2 appetizers and a dessert.
Watermelon Tiger Prawns
Compressed watermelon with lemon juice and zest. Compressing fruits does something to the wall cells of the fruit where the air bubbles and water are concentrated resulting in intensified flavor. Tiger prawns were poached then topped with yuzu sesame vinaigrette and tobiko and feta to finish.Cucumber Roll
A cucumber roll filled with a leek and tofu mousseline, topped with a Sous vide quail egg (missed out in picture), topped with crispy leek and finished with a drizzle of whisky ketchup.Chocolate Fudge Brownie
A rich chocolate brownie served with a berry sorbet and finished off with flakey sea salt.
Really proud of what I managed to serve for this menu special eventhough there were a few last minute cancellations 🙌
