Porridge potato prepared with 3 veggies

‎Its a pleasure to restart my posting blog again after a long brake as a result of Mom's cardiac ailment. I am here again to showcase how to and how I prepared my vegan filled sweet potatoes.

‎Today was my first time preparing or trying this method. No one taught me of it apart from my instinct 😜. Initially, I do prepare potatoes with either scent leaves or with utazi(a specie of bitterleaf). But, in today's own, the idea of adding 3 leaves together came into my metabolism and I concur with the idea. Honestly, it came out so beautiful and tasty. Let me show you how I did it.

‎First and foremost, I made use of:
‎
‎- 2 medium size of sweet potatoes
‎- Palm oil (desired quantity)
‎- Salt (to taste)
‎- Water (2 cups or base on the quantity you're cooking)
‎- Scent leaves (20 leaves)
‎- 20 Bitter leaves (utazi)
‎- 10 Pumpkin leaves (Ugu)
‎- Onions (1 medium size)
‎- pepper (as desired)
‎Let's move over to cooking itself.
‎
‎I cut off the 2 tips, ends or tails of the potatoes.
‎

‎I washed them with running water
‎

‎Then, I cut the potatoes as desired
‎

‎ Then rewashed to make sure there is no atom of sand.
‎

‎I put them inside the pot and added water as desired.
‎

Thn, i placed it on fire.

‎While waiting for it to soft, I washed and sliced both onions, and all the vegetables.
‎

‎First, I pounded the Onion until it became paste, next, I added both scent leaves and utazi and then continue pounding until they form paste.

‎At the expiration of 15 minutes, the potato was as soft as I desired. Next, I brought it down.
‎
‎If you noticed, I didn't peel off the skin of the potatoes before cooking. At that point, I sieved out the water.

Please, don't pour away the water. I peeled off the skin and pour them back to pot, poured back the water, placed on fire and allowed it to start boiling.

‎Immediately, I added the already made paste and stir.
‎

‎I also added both pepper, salt and red oil(palm oil)

‎Finally, I added my sliced pumpkin leaves.
‎

‎I allowed it to simmer for a minute. Then, I stirred and our food is ready.
‎

‎NOTE I didn't remove the skin of the potatoes before cooking in other to extract all the ingredients and vitamins contained in the skin. Because, according to scientists and nutritionists, the skin contains major vitamins and micronutrients like vitamin-B6,C, Riboflavin, foliate etc. So, peeling off the skin before cooking is like removing the main nutrients.
