Nakshi Pitha is a wonderful blend of winter atmosphere and Bengali folk culture. It is not just a food, but an aesthetic work of art created on a canvas of rice flour. The main feature of Nakshi Pitha is the presence of God on it. Flowers, vines or geometric designs are skillfully made with date palm fronds, bamboo sticks or needles. Usually made with boiled rice, this pitha is deep-fried in oil and then dipped in jaggery or sugar syrup and served. No wedding or special festival in rural Bengal is complete without a Nakshi pitha. This soft, chewy pitha can be stored for a long time, making it a popular gift. Every fold of this cake hides a story of the patience and love of mothers and sisters. It is the responsibility of all of us to preserve this invaluable art form of our tradition.
