The highlight of this evening was the tempting chicken bhuna.

I had planned to spend this afternoon a little differently. It was raining outside, so I thought of cooking something that would fill both my mind and stomach. What else could I think of, I went straight to the kitchen. I quickly made chicken bhuna filled with the aroma of garam masala using the chicken in the fridge. It didn't take me much time to prepare this special recipe, but its taste was incomparable.

At the beginning of cooking, I marinated the chicken pieces with ginger-garlic paste, sour curd and a little vinegar. This makes the meat very soft and juicy. Then I heated oil in a pan, boiled garam masala in it, and fried the chopped onion until it turned red. Then I put the marinated chicken in the pan and sautéed it with the spices. This sautéing process is the real magic. I slowly increased the heat and rubbed the spices on the meat. If you look at the first picture, you can understand how spicy and oily the meat has become.

Then I covered it and boiled the meat in its own water for a while. When the color of the meat turned dark golden, I added chopped raw chilies and some whole garam masala. And finally, I roasted the meat with a little water. The second picture is of the final stage of cooking, where the oil has released from the spices in the pan. A magical aroma of garam masala has spread throughout the kitchen.

In the evening, I served this chicken roast with hot steaming rice. Seeing the red gravy and soft pieces of meat on the plate, it was hard to control my greed. With the first bite, I knew that today's hard work was worth it. The chicken melted as soon as I put it in my mouth, the right balance of spices seemed to double the taste.
